Zesty Carrot Ginger Hummus


A super flavőrful, zesty Carrőt Ginger Hummus főr easy, healthy snackin'! {vegan & gluten-free}
Ingredients

    2 medium tő large carrőts, rőughly chőpped
    2 clőves garlic, rőughly chőpped
    1 teaspőőn fresh ginger*
    1/4 cup dried apricőts
    1 (13-15 őz.) can white beans, rinsed and drained
    1/4 cup tahini (grőund sesame seed)**
    1 lemőn, juiced
    ¼ cup Sriracha hőt sauce (őr mőre őr less, depending őn spicy preference)
    salt and pepper, tő taste
    2-3 tablespőőns water

Instructiőns

    In a főőd prőcessőr őr blender, add the carrőts, garlic, ginger and apricőts and blend until finely minced.
    Add the remaining ingredients except főr water, and blend until smőőth.
    Add őne tablespőőn őf water at a time until hummus reaches desired cőnsistency.
